Since leaving the helm of TAO Food! (NOW The Green Boheme) I have returned my focus to passions of my heart. I am passionate about making a difference by being the difference.

Here is a brief outline of the projects which SCC is currently functioning in.

Grant Proposal Outline
I. Executive Summary
The rise of childhood obesity has caused an increase in health problems that vary from psychosocial risks, such as low self-esteem, to type 2 Diabetes. Type 2 Diabetes in childhood can lead to cardiovascular disease and kidney failure when a child grows into an adult and ultimately end in a shorter life. With childhood obesity on the rise it becomes necessary for action to be taken. Longevity Nutrition works to eradicate childhood obesity, diabetes and other illnesses linked to poor nutrition. In fall, 2008 Longevity Nutrition started providing demonstration classes and healthy snacks to more than 300 Sacramento area school children. Longevity Nutrition, in collaboration with Organic Sacramento & California School Garden Network, Healthy Eating Active Living collaborative, Health Education Counsel hope to install healthy meal programs in Sacramento and, eventually, across the nation. These meals will increase the quality of children’s health exponentially and ultimately lead to a longer, happier life for each child.

II. Statement of need
Results from the 2007-2008 National Health and Nutrition Examination Survey (NHANES), using measured heights and weights, indicate that an estimated 17 percent of children and adolescents ages 2-19 years are obese. Among pre-school age children 2-5 years of age, obesity increased from 5 to 10.4% between 1976-1980 and 2007-2008 and from 6.5 to 19.6% among 6-11 year olds. Among adolescents aged 12-19, obesity increased from 5 to 18.1% during the same period.
Figure 1 depicts the rise of overweight children among the ages of 6-19 in the United States from 1963-2002 (Source: Center for Disease Control).
If this trend is allowed to continue the consequences will be devastating. Already, in a population-based sample of 5 to 17 year-olds, 70% of obese children had at least one cardiovascular disease risk factor while 39% of obese children had two or more CVD risk factors. Along with dangerous physical risks, obese children are social targets for bullying and discrimination. This negative experience can lead to low self-esteem, which hinders academic achievement, deters positive socialization and may persist into adulthood.

III. Project Description
Longevity Nutrition, in collaboration with Organic Sacramento, will create healthy meal programs in Sacramento and, eventually, across the nation. Longevity Nutrition will also provide healthy food demonstrations that show children how to prepare healthy snacks. Providing children with healthier food and teaching them how to make the snacks for themselves will work to lessen obesity and improve the physical and psychological well-being of children.

Formed by Synergy Chef, Richard Hemsley, Longevity Nutrition is a collaborative of living foods chefs that use their talent to create a better, healthier world through food. Longevity Nutrition and Synergy Chef Collaborative both work together with Organic Sacramento Et al to better the Sacramento community.

VI. Conclusion
Using the talents of living foods chefs, Longevity Nutrition will be able benefit the children of Sacramento with its meals and work towards considerably decreasing the obesity rate among children and adolescents.
