Almond Chia Truffles

Oh the Yum that is Life!!!

Check these out if you are looking for a quick sugar fix...

2 Cups Almonds Soaked 8 hours and rinsed
1/4 tsp Salt
1/4 cup Coconut Oil - warmed to liquid state
1 cup pitted dates

Equipment: Processor fitted with an "S" Blade, rubber spatula Fun Creative spirit and taste testers... Let the FUN Begin...

First, Pulse the Almonds until they are the size of coarse sand. Add in the Chia and all the powders and mix adding the coconut oil at the end. Then add the dates one or two at a time to prevent pre-mature balling and pulse until a dough forms.

Here is where the REAL Fun begins. This is a great children's activity- let children use spoons to scoop and form small balls. Roll each ball in cacao powder, Nibs, shredded coconut, Hemp seeds or any other creative substance you choose.

For best results scrape the dough onto a pie plate or a bowl and refrigerate to set 15 - 20 minutes before scooping and rolling.

Recipe of L.O.V.E. " Caramel Macchiato"

Wow! Super powerful Love filled drink for any occasion.

My friend Dez named it, "Caramel Machiatto"

In a blender combine these few simple ingredients:

1 Young coconut meat scraped out and water
3-6 dates to desired sweetness
2 Tbs Maca Powder
3 Tbs Mesquite Powder
1/2 tsp Mucuna Pruriens
1 pinch sea salt (optional)
1-2 tsp MSM (optional)

Blend these ingredients until smooth, add ice and water to desired taste.
I added 1 cup water and a tray of ice to produce 4 pints of finished Yumminess!

Since leaving the helm of TAO Food! (NOW The Green Boheme) I have returned my focus to passions of my heart. I am passionate about making a difference by being the difference.

Here is a brief outline of the projects which SCC is currently functioning in.

Here is the first rough draft from our grant writer as we embark on this adventure to heal thy way into the world!

Grant Proposal Outline
I. Executive Summary
The rise of childhood obesity has caused an increase in health problems that vary from psychosocial risks, such as low self-esteem, to type 2 Diabetes. Type 2 Diabetes in childhood can lead to cardiovascular disease and kidney failure when a child grows into an adult and ultimately end in a shorter life. With childhood obesity on the rise it becomes necessary for action to be taken. Longevity Nutrition works to eradicate childhood obesity, diabetes and other illnesses linked to poor nutrition. In fall, 2008 Longevity Nutrition started providing demonstration classes and healthy snacks to more than 300 Sacramento area school children. Longevity Nutrition, in collaboration with Organic Sacramento & California School Garden Network, Healthy Eating Active Living collaborative, Health Education Counsel hope to install healthy meal programs in Sacramento and, eventually, across the nation. These meals will increase the quality of children’s health exponentially and ultimately lead to a longer, happier life for each child.

II. Statement of need
Results from the 2007-2008 National Health and Nutrition Examination Survey (NHANES), using measured heights and weights, indicate that an estimated 17 percent of children and adolescents ages 2-19 years are obese. Among pre-school age children 2-5 years of age, obesity increased from 5 to 10.4% between 1976-1980 and 2007-2008 and from 6.5 to 19.6% among 6-11 year olds. Among adolescents aged 12-19, obesity increased from 5 to 18.1% during the same period.
Figure 1 depicts the rise of overweight children among the ages of 6-19 in the United States from 1963-2002 (Source: Center for Disease Control).
If this trend is allowed to continue the consequences will be devastating. Already, in a population-based sample of 5 to 17 year-olds, 70% of obese children had at least one cardiovascular disease risk factor while 39% of obese children had two or more CVD risk factors. Along with dangerous physical risks, obese children are social targets for bullying and discrimination. This negative experience can lead to low self-esteem, which hinders academic achievement, deters positive socialization and may persist into adulthood.

III. Project Description
Longevity Nutrition, in collaboration with Organic Sacramento, will create healthy meal programs in Sacramento and, eventually, across the nation. Longevity Nutrition will also provide healthy food demonstrations that show children how to prepare healthy snacks. Providing children with healthier food and teaching them how to make the snacks for themselves will work to lessen obesity and improve the physical and psychological well-being of children.

Using the talents of living foods chefs, Longevity Nutrition will be able benefit the children of Sacramento with its meals and work towards considerably decreasing the obesity rate among children and adolescents.

Updates!

Hello Friends and Family!
This is a brief note to update you in the adventures of Synergy Chef & The Art of Food!

First and foremost, I pray you have the time to visit The Green Boheme after they re-open on June 1st.

Second, as of today May 25th 2010, The Green Boheme is in violation of our verbal agreements and written contracts. I pray for a speedy resolution to the conflicts.

Third, Synergy Chef Richard Hemsley is available for a few more dates this summer for education purposes in groups of 10 or more. IF you ahve a specific topic you are interested in please call 916.572.6010 or write to classes@theartoffood.org

Synergy Chef is Specifically focused on the education of Children and Parents of Children all ages, Teachers and administrative persons in schools.

I can hardly wait to see what he's coming out with...he's made mention of French Cuisine as his first release. :)
The Little People Menu! What better way to nourish your child than with the freshest organic whole foods possible? We think your children should be honored with good nutrition that is tailored to THEIR palette!
Desserts! Yup, well loads of good stuff including our Ice Cream. You won't be disappointed.

Of course we will be offering what you are familiar with...Prepared Menu Items, Ala Carte...PLUS crackers, breads, dips, our house granola, desserts,unbaked pastry items, truly Raw nut butters, hummus, pate's, Nutmilks, sauces, dressings and ready to eat crunchies. Our commitment to you? Our food is carefully prepared fresh to ensure its vibrancy for 3-4 days from day of purchase. Period!

More Good News...We are making a commitment to our guests...you CAN dine here, and walk out the door in 40 minutes during lunch. If we can't provide that to you, your meal is on the house. Of course, you are welcome for as long as you wish! Please let your server know if you have time limitations and you plan to enjoy appetizer, entree and dessert so we can keep things flowing for you!
